Crunchy Veggie Grilled Sandwich

Grilled Sandwich, Veg Sandwich

Ingredients:
  • Bread Slices: 8 slices (whole wheat or multigrain bread for a healthier option)
  • Onion: 1 large (finely chopped)
  • Tomato: 1 large (finely chopped)
  • Capsicum (Bell Pepper): 1 medium-sized (finely chopped)
  • Carrot: 1 medium-sized (grated)
  • Sweet corn (kernels): 1 cup (Boiled)
  • Green Chilies: 1-2 (finely chopped, adjust according to spice preference)
  • Coriander Leaves: 2 tablespoons (finely chopped)
  • 5-6 tbsp, cheese spread
  • Cheese Slices: 4
  • Butter: 4 tablespoons
  • Salt: to taste
  • Black Pepper Powder: 1/2 teaspoon
  • Mix herbs: 1/2 teaspoon 
  • Chili Flakes: 1/2 teaspoon 
Instructions:

# Prepare the Veggie Mix:
  • In a mixing bowl, combine the cheese spread, chopped onions, tomatoes, capsicum, grated carrot, green chilies, sweet corn, coriander leaves, salt, black pepper powder, chili flakes and mix herbs. Mix everything well to create a uniform veggie filling.
# Assemble the Sandwich:
  • Take two bread slices and spread butter on one side of each slice.
  • Place a generous amount of the prepared veggie mix on the unbuttered side of one bread slice.
  • Optionally, add a cheese slice on top of the veggie mix.
  • Cover with the second bread slice, buttered side facing outwards.
# Grill the Sandwich:
  • Preheat a sandwich maker or grill pan.
  • Place the assembled sandwich in the preheated grill/sandwich maker.
  • Grill the sandwich until it turns golden brown and crispy on both sides. If using a grill pan, flip the sandwich halfway through to ensure both sides are evenly toasted.

  • Once the sandwich is grilled to perfection, remove it from the grill and let it cool for a minute.

Healthy Makhana Cutlets

Ingredients
  • 1 cup Makhana (foxnuts)
  • 2 medium-sized potatoes, boiled and mashed
  • 1 tea spoon ginger garlic paste
  • 2 table spoon oil
  • 1/2 cup finely chopped vegetables (carrots, peas, beans, etc.)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Coriander leaves finely chopped
  • Oil for shallow frying
Instructions
  1. Heat a pan on low-medium heat. Dry roast the Makhana until they become crispy. This should take about 5-7 minutes. Keep stirring to avoid burning. Once done, let them cool and then crush them coarsely using a rolling pin or a food processor.
  2. Heat two teaspoons of oil in a separate pan.. Add cumin seeds and let them splutter. Then, add the finely chopped vegetables and sauté until they become tender. Add ginger garlic paste, red chili powder, garam masala, and salt. Mix well and cook for a few more minutes until the spices are well combined with the vegetables.
  3. In a large mixing bowl, combine the mashed potatoes, crushed Makhana, and the cooked vegetable mixture. Mix everything thoroughly to form a dough-like consistency. Adjust seasoning as needed.
  4. Divide the mixture into small pieces, then form them into oval or round cutlets..
  5. For shallow frying, heat up some oil in a pan.. Once the oil is hot, place the cutlets in the pan and cook them until they turn golden brown on both sides. Be gentle while flipping to avoid breaking the cutlets. You can also deep fry them if you prefer a crispier texture, but shallow frying is a healthier option.
  6. Once the cutlets are evenly cooked and have a nice golden crust, remove them from the pan. Place them on a paper towel to remove excess oil.
  7. Serve hot with your favorite Green Chutney or sauce. They make for a delicious and nutritious snack.

Sweet Corn Chaat
Ingredients
  • 2 cups sweet corn kernels (frozen or fresh any of your choice)
  • 1 cup Onion finely chopped
  • ½ cup tomato finely chopped
  • 1 Green chillies finely chopped
  • As required Black salt
  • 2 tablespoon lime juice
  • Few Coriander leaves finely chopped
  • 1 tablespoon unsalted butter
  • 1 teaspoon red chili powder
  • 1 teaspoon jeera powder
  • 1 teaspoon Chaat Masala
  • Salt as required
  • 4 cups of water (for boiling corn kernels)
Instructions
  1. Boil 4 cups of water with a pinch of salt, once water start boiling add corn kernels. Boil for 4-5 minutes (avoid overcooking). Drain the water from the corn.
  2. In a large mixing bowl add warm corn and butter mix gently and keep aside.
  3. Add onion, tomato, green chilli, coriander leaves, red chilli powder, jeera powder, chaat masala and lime juice to the boiled corn. Mix well.
  4. Serve and Enjoy!!

Sweet Potato Chaat

Sweet Potato Chaat


Ingredients
  • 2 medium sweet potatoes, boiled, peeled, and cubed
  • 1 small red onion, finely chopped
  • 1 small tomato, chopped
  • 1 green chili, finely chopped
  • 1/4 cup chopped fresh coriander leaves
  • 2 tablespoon roasted peanuts
  • 1/4 teaspoon roasted cumin powder
  • 1/4 teaspoon chaat masala (a tangy spice mix)
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Ghee 4 tbsp
  • Curd 4 tbsp 
  • Salt to taste
  • Tamarind chutney (optional)
  • Sev (crispy chickpea flour noodles) for garnish (optional)
Instructions
  1. Boil sweet potatoes until they are tender but not mushy, peel them and then cut them into bite-sized cubes.
  2. Add ghee in a pan, fry sweet potatoes until golden brown. Take it out once it’s done.
  3. In a mixing bowl, combine the sweet potato cubes, curd, tamarind chutney, chopped red onion, chopped tomato, chopped green chili, and chopped coriander.
  4. Sprinkle roasted cumin powder, chaat masala, red chili powder, and a pinch of salt over the mixture.
  5. Sprinkle roasted peanuts and some sev (crispy chickpea flour noodles) on top of the chaat (optional).
  6. Sweet Potato Chaat is ready to be enjoyed !!
