Ingredients

  • 1 cup suji/rava (semolina)
  • 2-3 curry leaves, finely chopped
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 1 carrot finely chopped
  • 1/2 cup beans finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon oil
  • 2 tablespoons ghee
  • 1 lemon, juice
  • fresh green coriander finely chopped
  • 1/2 teaspoon sugar
  • Salt to taste

Instructions:

  1. Roast the rava/sooji (semolina) in a dry pan over medium heat until it turns light brown and fragrant. Set aside.
  2. Heat the oil in a heavy bottomed pan over medium heat. Add the mustard seeds and urad dal and cook until they crackle and the dal turns golden brown.
  3. Add onion, curry leaves, and green chilies and cook until the onions are tender then add tomato. Cook for 1 minute.
  4. Add roasted rava/sooji (semolina) to the mixture. Stir for 2 minutes.
  5. Add 3 cups of water with salt and a dash of sugar into the rava/sooji (semolina) mixture, stirring constantly to avoid lumps.
  6. Reduce the heat to low, cover the pan, and cook for 10 minutes, stirring occasionally.
  7. Add ghee and lemon juice, coriander  and cook for a few minutes more until the flavors are combined.
  8. Serve hot with green chutney.
