Ingredients:
- 1 cup instant rolled oats
- 1/4 cup diced and steamed carrots
- 1/4 cup chopped and steamed green beans
- 1/4 cup steamed sweet corn
- 1/4 cup steamed green peas
- 1/4 cup finely chopped onion
- 2 chopped green chili
- 4-5 finely chopped curry leaves
- 1/4 cup finely chopped tomatoes
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon mustard seeds
- 1 tablespoon oil
- Salt, to taste
- Chopped coriander leaves, for garnish
Instructions:
- Heat a pan over medium heat. Add the rolled oats and dry roast until they are lightly crisp and have a roasted aroma. Transfer to a plate and set aside.
- Heat the oil in the same pan. Add the mustard seeds and let them pop and sizzle for a few seconds.
- Add the curry leaves, onion, and green chilies and saute until softened, about 2 minutes.
- Add the steamed carrot, beans, corn, peas and tomatoes then, add turmeric powder, salt, and saute for a minute.
- Add the roasted oats half cup warm water and stir to combine. Cover the pan and cook over low heat for 5-7 minutes, or until the oats are cooked.
- Garnish with chopped coriander leaves and serve hot with mint coriander chutney.
