Oats upma

Ingredients:

  • 1 cup instant rolled oats
  • 1/4 cup diced and steamed carrots
  • 1/4 cup chopped and steamed green beans
  • 1/4 cup steamed sweet corn
  • 1/4 cup steamed green peas
  • 1/4 cup finely chopped onion
  • 2 chopped green chili
  • 4-5 finely chopped curry leaves
  • 1/4 cup finely chopped tomatoes
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon oil
  • Salt, to taste
  • Chopped coriander leaves, for garnish

Instructions:

  1. Heat a pan over medium heat. Add the rolled oats and dry roast until they are lightly crisp and have a roasted aroma. Transfer to a plate and set aside.
  2. Heat the oil in the same pan. Add the mustard seeds and let them pop and sizzle for a few seconds.
  3. Add the curry leaves, onion, and green chilies and saute until softened, about 2 minutes.
  4. Add the steamed carrot, beans, corn, peas and tomatoes then, add turmeric powder, salt, and saute for a minute.
  5. Add the roasted oats half cup warm water and stir to combine. Cover the pan and cook over low heat for 5-7 minutes, or until the oats are cooked.
  6. Garnish with chopped coriander leaves and serve hot with mint coriander chutney.
