Chili garlic chutney is a spicy and flavorful condiment that can add a kick to a variety of dishes. It's genrally used in Indian cuisine and pairs well with snacks, sandwiches, dosas, momos, fritters and more. Here's a basic recipe for homemade chili garlic chutney:

Ingredients:
- 10-12 dried red chilies (adjust to your preferred level of spiciness)
- 10-12 cloves of garlic, peeled
- 2 tablespoons oil (vegetable or sesame oil)
- 1 teaspoon cumin seeds
- 1/2 teaspoon asafoetida (hing)
- Salt to taste
- 1-2 teaspoons lemon juice (adjust to taste)
Instructions:
- Remove the stems from the dried red chilies. If you want a milder chutney, you can also remove the seeds. Soak the chilies in warm water for about 30 minutes to soften them.
- Drain the soaked chilies and add them to a blender or food processor along with the peeled garlic cloves.
- Grind them into a coarse paste. You may need to add a little water to facilitate blending, but try to use as little as possible.
- Heat the oil in a pan over medium heat.
- Add cumin seeds to the hot oil. Allow them to splutter.
- Add the asafetida (hing) and sauté for a few seconds until it becomes fragrant. Be careful not to burn it. Lower the heat and carefully add the chili-garlic paste to the pan.
- Cook the paste in the oil, stirring continuously, for about 5-7 minutes. This helps remove the raw taste of the garlic and chilies and enhances the flavor.
- Add salt to taste and continue to cook for another 2-3 minutes. Adjust the salt as needed.
- Turn off the heat and stir in the lemon juice. Adjust the quantity to suit your taste. This adds a tangy flavor to the chutney.
- Let the chili garlic chutney cool down to room temperature. Transfer it to a clean, airtight jar or container.
