Instant Besan Dhokla

Total Time - 40 Minutes (Approximately)
Serving - 4-5

Ingredients:
  • 1 cup besan (gram flour)
  • 1 table spoon oil
  • 1/2 cup yogurt (curd)
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon green chili paste
  • 2 teaspoon Lime juice
  • 1 teaspoon Eno fruit salt
  • Salt to taste
  • A pinch of turmeric powder
  • 2 cups water for steaming
  • 2 tablespoons chopped coriander leaves (for garnish)
  • 1 tablespoon grated coconut (optional)
For tempering:
  • 2 tablespoon oil
  • 1 teaspoon mustard seeds
  • 4-5 Green Chilis thinly sliced
  • 1 teaspoon Sugar
  • 1/4 teaspoon Salt
  • A few curry leaves
  • 1/4 cup Water

How to Make Instant Besan Dhokla

Prepare Dhokla Batter:
  1. In a mixing bowl, combine besan, oil, yogurt, ginger paste, green chili paste, lime juice, salt, and turmeric powder.
  2. Gradually add water and whisk to make a smooth batter without lumps. The batter should be thick yet flowing.
  3. Let the batter rest for 10 minutes.
Steam Dhokla:
  1. Grease a dhokla plate or any flat, shallow vessel that fits inside your steamer.
  2. Add Eno fruit salt to the batter and mix gently. You'll notice it will become frothy.
  3. Pour the batter into the greased plate and tap to spread it evenly.
  4. Steam the dhokla for about 15-20 minutes or until a toothpick inserted into it comes out clean.
Prepare the Tempering:
  1. Heat oil in a small pan. Add mustard seeds.
  2. Once they splutter, add curry leaves and green chilies sauté briefly.
  3. Add water, salt, sugar and stir well.
  4. Pour this tempering evenly over the steamed dhokla.
Cut and Serve:
  1. Let the dhokla cool for a few minutes.
  2. Cut it into squares or diamonds. 
  3. Garnish with chopped coriander leaves and grated coconut, if desired.

Serve the instant besan dhokla with green chutney or tamarind chutney.
