- 1 cup besan (gram flour)
- 1 table spoon oil
- 1/2 cup yogurt (curd)
- 1/2 teaspoon ginger paste
- 1/2 teaspoon green chili paste
- 2 teaspoon Lime juice
- 1 teaspoon Eno fruit salt
- Salt to taste
- A pinch of turmeric powder
- 2 cups water for steaming
- 2 tablespoons chopped coriander leaves (for garnish)
- 1 tablespoon grated coconut (optional)
- 2 tablespoon oil
- 1 teaspoon mustard seeds
- 4-5 Green Chilis thinly sliced
- 1 teaspoon Sugar
- 1/4 teaspoon Salt
- A few curry leaves
- 1/4 cup Water
How to Make Instant Besan Dhokla
- In a mixing bowl, combine besan, oil, yogurt, ginger paste, green chili paste, lime juice, salt, and turmeric powder.
- Gradually add water and whisk to make a smooth batter without lumps. The batter should be thick yet flowing.
- Let the batter rest for 10 minutes.
- Grease a dhokla plate or any flat, shallow vessel that fits inside your steamer.
- Add Eno fruit salt to the batter and mix gently. You'll notice it will become frothy.
- Pour the batter into the greased plate and tap to spread it evenly.
- Steam the dhokla for about 15-20 minutes or until a toothpick inserted into it comes out clean.
- Heat oil in a small pan. Add mustard seeds.
- Once they splutter, add curry leaves and green chilies sauté briefly.
- Add water, salt, sugar and stir well.
- Pour this tempering evenly over the steamed dhokla.
- Let the dhokla cool for a few minutes.
- Cut it into squares or diamonds.
- Garnish with chopped coriander leaves and grated coconut, if desired.
