Ingredients:

  • 6 cups of Cashews (kaju)
  • 3 cups of Sugar
  • 1.5 cups of Water
  • 1 teaspoon of Ghee (clarified butter)
  • 1/2 teaspoon of Cardamom powder
  • Silver edible foil for garnish (optional)

How to make Homemade Kaju Katli

Instructions:

Preparation of Cashew Powder:
1. First dry the cashew nuts thoroughly in the sun.
2. Begin by preparing the cashew powder. Place 6 cups of cashews in a food processor and blend them into a fine powder. Ensure you pulse and blend rather than allowing the cashews to release oil and turn into a paste.
3. Sieve the cashew powder to ensure there are no lumps, and set it aside.

Prepare the Sugar Syrup:
4. In a heavy-bottomed pan or kadai, add the sugar and water. Stir well and bring the mixture to a boil.
5. Keep stirring the sugar-water mixture until it reaches a one-string consistency. To check, take a drop of the syrup between your thumb and forefinger. When you separate your fingers, it should form a single thread.

Combine Cashew Powder and Sugar Syrup:
6. Once the sugar syrup reaches the desired consistency, reduce the heat to low and add the cashew powder to the syrup.
7. Stir continuously to combine the cashew powder and sugar syrup. The mixture will thicken.

Add Ghee and Cardamom:
8. Add the ghee and cardamom powder to the mixture. Continue stirring over low heat.
9. The mixture will become thicker, and it will leave the sides of the pan.

Transfer to a Greased Plate:
10. Grease a plate or tray with a little ghee and keep it ready.
11. Pour the thickened cashew mixture onto the greased plate.

Flatten and Garnish:
12. Fold the mixture using a spatula until it thickens and forms a dough-like consistency.
13. Once the dough is formed, lightly knead it to create a soft dough.
14. Place a butter paper or plastic wrap on top of the mixture and use a rolling pin to flatten it into a uniform, thin layer.
15. If you like, you can garnish the surface with silver edible foil (varak).

Cut into Diamond Shapes:
16. Allow the Kaju Katli to cool for a while but not completely. While it is still warm, use a knife to cut it into diamond or square shapes.

Cool and Store:
17. Let the Kaju Katli cool completely, and it will harden further.
18. Once it has cooled down, store it in an airtight container.
